1/2 apple, grated

1 cup low-fat buttermilk

1 1/2 cups wheat bran

1 cup all-purpose flour

1/4 cup packed brown sugar

2 eggs whites

1 teaspoon baking soda
Instructions
- 1. In a small bowl, combine bran and buttermilk. Set aside to soak for 10 minutes.
- 2. Preheat oven to 350 degrees F (175 degrees C). Lightly grease muffin pan, or use paper liners.
- 3. In a large bowl, mix together flour, brown sugar and baking soda. Stir in bran mixture and egg whites. Fold in grated apple. Divide batter into 12 muffins cups.
- 4. Bake in preheated oven for 16 to 18 minutes, or until a toothpick inserted into the center out clean.
- allow to cool for 5 minutes before removing from the pan.
