Ingredients [?] Add all ingredients to Shopping List

  •   1/2- 3/4 tsp Jamician Curry Powder
  •   1/4 tsp salt (omit if req'd for health)
  •   1/3 cup milk
  •   2 eggs
  •   1/2 cup mayonnaise
  •   1/3 cup dried apricots, finely chopped
  •   1 cup grated Swiss cheese (4oz)
  •   1/4 cup chopped green onions
  •   3/4 cup diced chicken
  •   --------------------
  •   Note: Previously submitted Pastry Recipe ( below Quiche recipe) had incorrect amt. of water.

Instructions

  1. Mix eggs, milk, salt, Jamician Curry

    Powder and mayonnaise.

    Mix chicken, onions and cheese in

    separate bowl.

    Prepare pastry shells in tins. Do not bake

    at this time.

    Place 1 large tsp. chicken mixture in

    shells.

    Cover with mayonnaise mixture, using

    gravy ladle or large spoon.

    Bake 400 degrees for 15-20 minutes,

    until brown.

    Yield: 12 quiche.

    MAGGIE'S NO-FAIL PASTRY

    3 cups all purpose flour

    1 1/2 cups shortening

    10 Tbs. tap water (vary re: humidity)

    Cut shortening into flour with pastry

    cutter or two knives.

    Add water and mix.

    Roll out pastry on floured board.

    Cut out required size circles for shell

    tins.

    Place in shells and add Jamacian Curried

    Quiche Mix.

    Yield: approx 12 shells. Bake as directed.
