Birra Moretti is the perfect accompaniment to this succulent and satisfying pork recipe. The clean acidity and fine bubbles in the lager are particularly refreshing when served alongside the moist roasted meat.

450 g pork loin

225 ml extra virgin olive oil

1 large onion

2 medium carrots
-
1 stalk of celery

55 ml balsamic vinegar
-
1 bay leaf
-
1 sage leaf

salt and black pepper
Instructions
- roughly chop the onions, carrots and celery
- place in a food processor with the oil and balsamic vinegar and pulse until pureed
- season the mixture with salt and pepper and arrange it in the bottom of a roasting tin
- place the pork in the roasting tin along with the sage and pay leaves
- roast for approcimatley 1 hour at 375 F
- remove thepork from the tin, carve into slices and arrange on a platter
- spoon the hot sauce from the roasting tin over the pork and serve
