  •   8 wide celery ribs, trimmed
  •   1/4 cup cream cheese(2 ounces)soften
  •   2 tbls mayo
  •   1 tbls fresh lemon juice
  •   2 tsp finely chopped tarragon
  •   2 tsp finely chopped parsley
  •   1/2 teaspoon finely grated lemon zest
  •   1/2 pound lump main lobster ( cooked)
  •   1/4 cup finely chopped fennel for garnish
  •   3 tbls finely chopped red onion
  •   kosher salt and freshly ground pepper

Instructions

  1. Peel the celery ribs so they sit flat and then cut them on the diagonal into 1-2 inch lengths.
  2. In a medium bowl, combine all the ingredient.
  3. season with salt and pepper.
  4. Spoon 1 teaspoon of the lobster salad onto each piece of celery and garnish with a bit of fennel.
