8 wide celery ribs, trimmed

1/4 cup cream cheese(2 ounces)soften

2 tbls mayo
-
1 tbls fresh lemon juice

2 tsp finely chopped tarragon

2 tsp finely chopped parsley

1/2 teaspoon finely grated lemon zest
-
1/2 pound lump main lobster ( cooked)
-
1/4 cup finely chopped fennel for garnish
-
3 tbls finely chopped red onion
-
kosher salt and freshly ground pepper
Instructions
- Peel the celery ribs so they sit flat and then cut them on the diagonal into 1-2 inch lengths.
- In a medium bowl, combine all the ingredient.
- season with salt and pepper.
- Spoon 1 teaspoon of the lobster salad onto each piece of celery and garnish with a bit of fennel.

You could buy frozen lobster packages from local store You could use dry vegetables instead of fresh You could make the salad ahead of time. Can be refrigerated for up to 1 day
