1/2 cup Fat Free Plain Yogurt

1 Lime, juiced

1 tsp Honey

1/4 tsp Paprika
-
1/4 tsp cumin
-
1/4 tsp salt
-
1 tsp chopped fresh coriander

2 Boneless, skinless chicken breasts, cut into strips or chunks 2 tsp vegetable oil

2 Green onion, chopped
-
1/2 Mango, peeled, seeded and chopped

1/2 Red bell pepper, sliced

1 Clove garlic, minced
-
1 tsp Minced fresh ginger
Instructions
- For sauce: in a small bowl blend together yogurt, lime juice, honey, paprika, cumin, salt and coriander. Set aside.
- For Mango chicken: in large non-stick skillet heat oil over medium-high heat.
- Add chicken and sauté for about 3 minutes.
- Add red pepper, garlic and ginger. Sauté for an additional 3 minutes.
- Add mango and green onion and sauté for an additional 3 minutes or until chicken is cooked and vegetables are tender.
- Turn down heat to low and gently add prepared sauce. Heat just until warm and remove from heat. Serve immediately.
