  •   1/2 cup Fat Free Plain Yogurt
  •   1 Lime, juiced
  •   1 tsp Honey
  •   1/4 tsp Paprika
  •   1/4 tsp cumin
  •   1/4 tsp salt
  •   1 tsp chopped fresh coriander
  •   2 Boneless, skinless chicken breasts, cut into strips or chunks 2 tsp vegetable oil
  •   2 Green onion, chopped
  •   1/2 Mango, peeled, seeded and chopped
  •   1/2 Red bell pepper, sliced
  •   1 Clove garlic, minced
  •   1 tsp Minced fresh ginger

Instructions

  1. For sauce: in a small bowl blend together yogurt, lime juice, honey, paprika, cumin, salt and coriander. Set aside.
  2. For Mango chicken: in large non-stick skillet heat oil over medium-high heat.
  3. Add chicken and sauté for about 3 minutes.
  4. Add red pepper, garlic and ginger. Sauté for an additional 3 minutes.
  5. Add mango and green onion and sauté for an additional 3 minutes or until chicken is cooked and vegetables are tender.
  6. Turn down heat to low and gently add prepared sauce. Heat just until warm and remove from heat. Serve immediately.
