- add 2 tablespoons chopped fresh cilantro, or parsley or parsley
- add 1 clove garlic
- add 1/2 teaspoon red pepper flakes (optional)
- add 1 jalapeno pepper, seeded and minced finely (optional)
- add 1 shallot
- add 2 fresh mangoes
- add 2 teaspoons fresh lime juice, or lemon or lemon juice
- add 1/4 cup crushed pineapple
- add salt and pepper (to season)
- add 2 tablespoons extra virgin olive oil
- add 1/4 green bell pepper
- add 1/4 red bell pepper
- Mix together all ingredients in a bowl.
- Serve with chips or over grilled tuna, salmon, chicken or pork!
