1 avocado diced

1/3 cup chopped red onion

1 large tomato diced

1 small mango diced

Mango Salsa

salt and pepper to taste

Zest of 2 limes

1/4 cup lime juice

1/4 cup olive oil
-
1/2 cup shredded sharp cheddar cheese

2 cups shredded romaine lettuce
-
One 18 Oz bag of standard size flour tortillas

1 1/2 pounds boneless skinless chicken tenders

Chicken Wrap
Instructions
- Mango Salsa
You'll need to make the mango salsa first to allow the flavors to marry together. Combine all ingredients in a medium bowl except for the avocado and store in the fridge. Dice and add the avocado just prior to serving.
Chicken
Mix the olive oil, lime juice, and lime zest together in a large bowl. Cut chicken into approximately 1 inch cubes. Season generously with salt and pepper. Place chicken cubes in the bowl with the olive oil mixture. Coat evenly. Saute chicken in a large pan over medium-high heat for approximately 5 minutes, or until fully cooked. Pull off heat and set aside.
Wrap
To construct the wrap place one tortilla on a plate. First place approximately 5 pieces of chicken on the tortilla. Next place 1/8 cup shredded romaine lettuce. Next scoop 2-3 tablespoons of salsa over the chicken. Top with 1 tablespoon of shredded cheddar cheese. Serves 8. Enjoy!
