This is one of my summer favorites. I usually serve atop steamed chicken breasts with rice, but then we eat the rest of the salsa by itself!

  • add   1-2 roma tomato
  • add   1/2 red onion
  • add   1/4 cup cilantro
  • add   1 lemon, juice of or limes
  • add   3 ripe mangoes
  • add   2 jalapeno peppers (more or less to taste)
  • add   sugar

Instructions

  1. Mix all ingredients well.
  2. Let sit at room temp 1 hour for flavors to meld.
  3. Serve with any meat dish, or as a beautiful side dish.
