This recipe is the closest to the Carmelo's Marsala Cream Sauce served at Macaroni Grill. It is excellent on pasta, especially ravioli!

  • add   1 Shallot -- minced
  • add   1 tb Unsalted butter
  • add   1 c Dry marsala wine
  • add   1 t Fresh thyme
  • add   1 c Heavy cream
  • add   2 tb Unsalted butter -- cubed
  • add   Salt and white pepper -- to taste
  • add   1/2 c Grated parmesan

Instructions

  1. Saute shallot in the butter, covered, for 5 min. add
  2. wine and thyme and reduce until only about 2 tbsp of
  3. liquid remain. Add cream and simmer until reduced by
  4. half. add butter and stir continuously until fully
  5. emulsified. season with salt and pepper. Stir in parmesan. keep warm
  6. until ready to serve.

To make Macaroni Grill's chicken ravioli dish, I buy chicken/parmesan ravioli at the grocery story (Butoni), although if you find larger ones that would work better. After the ravioli cooks and I make the sauce, I add the ravioli to the sauce. Place it in on an oven safe plate (or a baking dish) along with cooked asparagus (chopped in one inch pieces). Cover the ravioli in a layer of parmesean. Sprinkle the dish with chopped prosciutto. Place the baking dish under the broiler just until the cheese has browned. Serve immediately.
