Mexican Party Dip (Chili Con Queso)

  • add   1/2 lb monterey jack cheese
  • add   1/4 teaspoon salt
  • add   1 (4 ounce) can chopped green chilies
  • add   1/4 cup heavy cream
  • add   1 (8 1/4 ounce) can tomatoes
  • add   1/4 cup green onions
  • add   2 tablespoons butter or margarine
  • add   tortilla chips

Instructions

  1. Saute onion in hot butter until tender.
  2. Add tomatoes, chilies and salt, mashing tomatoes with a fork.
  3. Simmer for 15 minutes, stirring occasionally.
  4. Add cheese cubes and stir until cheese is melted, about 2 minutes.
  5. Add cream and stir constantly for 2 minutes.
  6. Remove from heat and let stand for 15 minutes.
  7. Serve warm with Tortilla Chips.
