  •   1/2 cup malted milk powder
  •   2 teaspoons vanilla extract
  •   1/2 teaspoon ground cinnamon
  •   1 1/2 cups all-purpose flour
  •   1 egg
  •   2 egg whites
  •   1/2 cup white sugar
  •   2 teaspoons baking powder
  •   2 tablespoons white sugar
  •   1/2 cup milk
  •   1 tablespoon water
  •   1/2 teaspoon salt
  •   1 tablespoon instant coffee powder

Instructions

    1. Preheat oven to 400 degrees F (205 degrees C). Grease muffin cups.
    2. Mix together egg, egg whites, and milk. Stir in coffee powder, water, and vanilla.
    3. In a large bowl, mix together flour, malted milk powder, 1/2 cup sugar, baking powder, and salt. Stir in liquid mixture. Mix together really well, until batter is thin and gooey like cake batter. Fill muffin cups 2/3 full. In a small bowl, stir together cinnamon and 2 tablespoons sugar. Sprinkle cinnamon sugar over muffins.
    4. Bake in preheated oven for 20 to 25 minutes.
