  •   pre heat oven to 350
  •   3 large eggs
  •   2 tsp cinnamon
  •   1-1/2 cups oil
  •   2 tsp vanilla
  •   2 cups sugar
  •   3 cups apples sliced in thin strips
  •   3 cups flour
  •   1-1/2 cups pecans and black walnuts chopped and mixed
  •   1 tsp salt
  •   1 tsp tsp baking soda
  •   Topping:
  •   1 cup brown sugar
  •   1/2 cup milk
  •   1/2 cup butter
  •   1 tsp vanilla or rum extract
  •   glaze:
  •   2 cups powder sugar
  •   1 tsp mayo
  •   1 tsp vanilla

Instructions

  1. Mix eggs, oil, and sugar. Blend well. Sift flour, salt,soda and cinnamon. Add to egg mixture. Add vanilla, apples and nuts. Mix well. Pour into a 8" bunt pan. Bake for 1 to 1-1/2 hours on 350 till cake is set in the middle and is golden brown. Mean while combine brown sugar, milk, butter, and vanilla in a sauce pan and cook for 2 minutes, pour over cake while it is hot out of the oven (leave in the bunt pan). When cooled completely remove on to serving plate.
  2. combine powdered sugar, mayo and vanilla till a smooth slightly thick icing forms. Once cake is cooled drizzle icing over entire cake and sprinkle with additional nuts, and enjoy!!!

I have done several veriation such as added raisins, mango, and even bannana's with the apples they all have came out Great!! just play with the recipe and add your favorites and it sure to be a hit at any party or family gathering.

This was my first cooking trial with persimmons, the orangish fruit that looks like a tomato, and it was awesome! Mildly flavored fruit when paired with chocolate, walnuts and spices, it resulted into a perfect christmas spice cake!
