This recipe was given to me by my tennis mate Heather M. from Canada ,she said this special sweet is made for Canadian first of July holiday's.. it looked great & tasted yummy ..i would say it is definitely a chocolate lovers dream!! the best part of this recipe, you don't have to heat the oven to bake...keep the house cool in July!

Change Serving Size
  • add   First Layer:
  • add   1/2 cup butter
  • add   1 cup chopped coconut
  • add   2 oz unsweetened chocolate
  • add   1 egg, beaten
  • add   1 tsp vanilla extract
  • add   2 cups rolled oats
  • add   1/3 cup granulated sugar
  • add   (The recipe does not call for salt, but I added a bit just to balance out the sweetness)
  • add   Second Layer
  • add   1 tbsp butter
  • add   2 cups icing sugar
  • add   1/2 tsp vanilla extract
  • add   2 1/2 tbsp milk
  • add   Third Layer
  • add   2 oz unsweetened chocolate
  • add   1 tbsp butter
  • add   1 tbsp cream (I did not have cream and used milk)

Instructions

  1. Grease a 9 X 9 inch pan (I used 8X8)
  2. In a saucepan, melt the butter for the first layer. Then add the unsweetened chocolate. When the chocolate has melted (do it on low) into butter, add sugar, vanilla and egg. Slowly add oats and coconut. Pour the mixture into the pan and allow it to harden in the fridge for at least half an hour.
  3. Second Layer
  4. for icing,In a saucepan, melt the butter. Stir in the milk, vanilla and i sugar . smooth it into the pan, over the first layer. Replace in fridge to cool.
  5. Third Layer
  6. When the second layer is cool, melt the chocolate for the third layer with the butter and cream in a saucepan. Pour over the first two layers and put back in the fridge to harden.
  7. when it is harden cut in small rectangular or square & serve.
  8. Enjoy!
