Old Fashioned Oatmeal Cake

There are lot's of versions to this recipe, this is my favorite. A very moist, dense cake that we've taken to picnics and served at dinners as well.

  • add   1 teaspoon cinnamon
  • add   1 cup margarine
  • add   1 teaspoon vanilla
  • add   2 eggs
  • add   1 1/2 cups flour
  • add   1 teaspoon baking soda
  • add   1/4 cup canned milk (may need 1/4 c more if to dry)
  • add   1 pinch salt
  • add   1 teaspoon baking powder (optional)
  • add   1 1/2 cups boiling water
  • add   1 cup brown sugar
  • add   1 cup coconut
  • add   1 teaspoon vanilla
  • add   1 cup white sugar
  • add   1 cup chopped nuts
  • add   1 cup oatmeal (I use quick oats)
  • add   2/3 cup brown sugar
  • add   1/2 cup shortening or margarine
  • add   6 tablespoons melted butter


  1. Pour boiling water over oatmeal.Let it cool, and add all other ingrediants 1 at a time.
  2. Bake at 350 for 30 minutes.
  3. While cake is baking, mix all topping ingrediants together, when cake comes out of oven, top w/ the topping mixture and put it under the broiler for 3 minutes---be carefull not to burn, watch it!
  4. Serve warm or cooled.
