Old Fashioned Oatmeal Cookies

This recipe came from my ex-mother in law. These cookies are almost like eating a cake. They are soft and fluffy.

  •   1 cup seedless raisins
  •   1 cup water
  •   3/4 cup soft shortening
  •   1 1/2 cups sugar
  •   2 eggs
  •   1 tsp. vanilla
  •   2 1/2 cups sifted flour
  •   1/2 tsp. baking powder
  •   1 tsp. soda
  •   1 tsp. salt
  •   1 tsp. cinnamon
  •   1/2 tsp. cloves
  •   2 cups rolled oats
  •   1/2 cup chopped nuts-optional

Instructions

  1. Simmer raisins and water in saucepan over low heat until raisins are plump 20-30 minutes. Drain raisin liquid into measuring cup. Add enough water to make 1/2 cup. Heat oven to 400 degrees. Cream shortening, sugar, eggs and vanilla. Stir in raisin liquid. Sift together flour, baking powder, soda, salt and spices; stir in. Add rolled oats, nuts and raisins. Drop rounded teaspoons about 2 inches apart on ungreased baking sheet. Bake 8-10 minutes or until lightly browned.

I use an ice cream scoop to make giant sized cookies. They are like mini cakes-yummy! Great for gift giving.

This recipe is old, from mid 1800's - Toots' fav cookies. She made them in batches that were huge. She wanted family to visit her, so she started baking cookies and freezing them in dozens of zip locks. And they came, grandkids just had to stop to say hi, my husband stopped in and ate them on the way home still frozen! Momma loved to bake and these are old fashion good...they simply say Toots

Every year after Thanksgiving; mom would make these yummy cookies...it would keep us warm till the Christmas cookies hit the table ;) I always make mine in the food processor and they're a jewel of yum!
