Ingredients [?] Add all ingredients to Shopping List

  •   Panko bread crumbs
  •   3 eggs
  •   1 tsp black pepper
  •   2 tbsp 5 spice powder
  •   1 cup flour
  •   Chicken coating:
  •   canola oil for frying chicken tenders
  •   cashews
  •   romaine lettuce
  •   1 small zuchinni, carrot and red pepper - julienned and tossed with 2 tbsp sesame oil
  •   1 package boneless, skinless chicken breast tenders
  •   4 large flour tortilla wraps
  •   Wrap:
  •   1/8 tsp cayenne pepper (or to taste)
  •   1 tbsp hot sauce
  •   5 tbsp soy sauce
  •   2 tbsp honey
  •   2 tbsp rice vinegar
  •   2 green onions-chopped
  •   1/3 cup chicken broth
  •   2 tsp mince garlic
  •   1 tbsp ground/powdered ginger
  •   2 tbsp sesame oil
  •   4 tbsp creamy peanut butter
  •   Peanut Sauce:

Instructions

  1. Peanut Sauce:
    Mix all ingredients in a sauce pan over med heat, taking care not to burn/over cook. When smooth and ingredients mixed, remove from heat and let thicken.

    Chicken:
    Mix flour, 5 spice powder and pepper thoroughly. Dredge tenders in flour mixture, then egg, then panko. deep fry in oil until golden brown both sides-4-6 minutes.

    Wraps:
    Toss vegetables in sesame oil and stir fry on high heat for 2-3 minutes (maintain crispness)

    Brush tortillas with light coat of sesame oil and heat in a skillet on high approx 30 seconds, do not cook until crisp.

    Lay tortillas with cooked side up, evenly divide chicken and vegetables, add lettuce, cashews and top with peanut sauce.
    Serve.
