Chicken, potatoes or yucca, mushrooms, and yellow ,green & red peppers ,plum tomatoes zuccine are wrapped in aluminum foil for one-dish meals cooked on top of out sde grill or picnic campfire! This is easy to make for camping and hosting a out side grill party with family & friends. prepare them at home and then leave them in the cooler until ready to cook. You can use any combination of meat and vegetables that you like....then you can seat back & enjoy your family & guests while the dish is getting read on open fire or grill...enjoy...wgatoor

  • add   1 1/2 pound skinless, chicken ( thigh, breast) meat , beef or rabbit - cut up small
  • add   2 onions, diced
  • add   1 (8 ounce) package sliced fresh mushrooms
  • add   1 yellow bell pepper, seeded and sliced into strips
  • add   1 red bell pepper, seeded and sliced into strips
  • add   1-green pepper seeded & sliced
  • add   4 cloves garlic, sliced
  • add   4 small potatoes, or 2 med yucca root cubed
  • add   1/4 cup extra virgin olive oil
  • add   1 lemon, juiced or 2 tea spoon lemmon pepper seasoning

Instructions

  1. DIRECTIONS
  2. In a large bowl, or a large zip-top bag, combine the chicken, onion, mushrooms, green, red & yellow pepper, garlic, and potatoes.or yucca Pour in the Extra virgin olive oil and lemon juice or lemon pepper seasoning, then mix well.
  3. Evenly divide the mixture between 4 large sheets of heavy duty aluminum foil. edges tightly. again, securely in another sheet of foil to double wrap.
  4. Cook in the hot coals of a open grill or picnic campfire until the chicken is opaque and the potatoes are tender, around 50 to 60 minutes ........ .Enjoy
