  • add   3/4 cup Passover chocolate chips, optional
  • add   1 cup pecans, chopped
  • add   2/3 cup superfine or granulated sugar
  • add   1/8 tsp. salt
  • add   1 tsp. Passover vanilla extract
  • add   2 egg (whites)
  • add   parchment paper


  1. Preheat oven to temperature 250°F. Cover cookie sheets with parchment paper. Beat egg whites, vanilla and salt with an electric mixer at high speed until frothy. Gradually add sugar, approximately 2 tablespoons at atime, beating well after each addition, until mixture is stiff and shiny and stands in peaks. Fold in remaining ingredients. Drop meringues by teaspoonfuls onto cookie sheets. Bake 30 minutes.
