Change Serving Size
  • add   1 tbsp. coconut oil
  • add   1 lb. pork tenderloin, thinly sliced
  • add   1 organic red pepper, cut to bite size
  • add   1 organic medium size sweet onion, cut to bite size
  • add   1 tsp. organic GF cumin
  • add   1 tsp. organic GF sweet paprika
  • add   1 x (13.5 oz) canned black beans, drain and rinse
  • add   ½ cup water
  • add   2 cups cooked organic red and white quinoa (as per package instructions)
  • add   1 cup chopped organic parsley
  • add   1 tsp. sea salt


  1. Heat coconut oil in a non-stick sauté pan, add pork and brown on all sides
  2. Add red pepper and onion and stir-fry for 2 minutes, then add cumin and paprika and cook one more minute
  3. Add beans and water, cover and simmer for 30 minutes
  4. Stir in quinoa, parsley and sea salt and enjoy!
