red lentil loaf

This dish came from Vegetarian Gourmet way back in the 90s. I think the mag is now dead. The recipes were excellent so that is a shame that it went the way of Veggie Life. They came up with some great sides and meatless mains. This goes very well with Black Bean Stuffed Peppers and I will post that recipe also.

Ingredients [?] Change Serving Size Add all ingredients to Shopping List

  •   1 cup dried red lentils
  •   1 cup rolled oats
  •   1 1/2 teaspoons egg substitute or 1 whole egg
  •   2 tablespoons water
  •   1 cup cooked brown rice
  •   1 cup grated carrots
  •   2 tablespoons low sodium soy sauce or Braggs liquid aminos
  •   2 scallions, chopped
  •   2 garlic cloves, minced
  •   1 teaspoon dried sage
  •   1/4 cup dried breadcrumbs (optional)

Instructions

  1. Cook your lentils. [see how to cook your lentils below if you don't know how]
  2. Preheat oven to 350F Then oil or pam a loaf pan and sprinkle sides and bottom with a tbsp of oats.
  3. Whisk egg replacer and water until light and foamy.
  4. In a large bowl, combine the egg replacer and lentils with the remaining ingredients.
  5. Add the bread crumbs if you desire a firmer loaf.
  6. Press mixture into loaf pan and bake for 40 minutes. Remove from oven and let stand 5 to 10 minutes before slicing.
  7. Serve with a red pepper sauce.
  8. Directions for cooking the lentils:
  9. Your ratio is 3 cups water to 1 cup dried red lentils.
  10. Cook them
  11. Stove top, you are looking at 15 to 20 minutes.
  12. Pressure cooker, 5 to 7 minutes.
  13. This recipe should give you 1 2/3 cup cooked lentils.
  14. Remember you do NOT soak these.

Note this can work as a Veggie main dish for a holiday and make a nice side for everyone else. It doesn't take much to make it and you can actually stick it in with the turkey if you are making one. Serve with something like sauteed mushrooms in place of the gravy for Veggie guests. I have also served it with a great mushroom gravy which also was meatless to Vegetarians.
