  •   1doz green onion sticks
  •   1 dozen thin slices ripe papaya, seeded
  •   Garnish.
  •   1/4 mayonnaise
  •   1 cups thinly sliced green onions
  •   1/2 cup peeled and cored chopped Granny Smith apples
  •   1//2 cup shredded packaged slaw mix
  •   1 cup green and 1 cup red-ripe papaya meat, julienne cut
  •   (skin off)
  •   2 cups roaster=fresh cooked chicken meat, shredded or cut into thin strips
  •   1 tbsp honey-Dijon mustard
  •   1/4 cup shredded Monterrey Jack cheese with jalapeno peppers
  •   1 cup ricotta cheese
  •   (To soften tortillas for easier handling, place a stack of 4 tortillas between 2 layers of slightly dampened paper towels. Microwave at "high" for 30-45 seconds or until warm.)
  •   4 (6-inch) flour tortillas

Instructions

  1. Yield:
    12 appetizer snacks

    Combine ricotta, cheddar and Dijon mustard., blend well. Using half of mixture.Spread a thin layer over 1 side of each soft tortilla.

    Top each tortilla with chicken, spread remaining cheese mixture over chicken.

    Combine papaya juliennes, slaw mix, apples, onions and mayonnaise ; spoon evenly over chicken and cheese. Roll up tightly , cut into thirds and secure with toothpicks.

    Place on platter and garnish with cut, sliced papayas and green onions
