  • add   1 lb of potatoes
  • add   1/2 lb of carrots
  • add   1/2 cup of sweet corn kernels
  • add   1/2 cup of mayonnaise
  • add   1/2 cup of thawed frozen peas
  • add   1/2 cup of cooked diced beets
  • add   1 apple diced into small cubes (optional)
  • add   1 medium red onion
  • add   3 eggs
  • add   Salt

Instructions

  1. Boil the potatoes, carrots and eggs.
  2. Peel and dice eggs into small cubes.
  3. Mix in the rest of the ingredients.
  4. Adjust salt to taste.
  5. Put in the refrigerator for 30 minutes prior to serving.
