  • add   Italian parsley
  • add   1 package fresh baby spinach
  • add   3 Tbsp bacon bits
  • add   2 tsp minced garlic
  • add   3 Tbsp honey
  • add   3 Tbsp Dijon mustard
  • add   1 container sliced baby bella mushrooms
  • add   1 small onion
  • add   2 cups balsamic vinegar
  • add   olive oil
  • add   1 lemon
  • add   4 boneless,skinless chicken breasts


  1. Heat olive oil over medium high heat. Squeeze lemon over chicken.Sprinkle salt and pepper on chicken. Place in olive oil. Sear on both sides, without moving around, until golden brown. Remove from pan and place in baking dish. Turn heat in pan down to medium and add vinegar, deglaze pan. Let cook down for a few minutes while chopping onion. Chop or dice onion in big pieces. Add to vinegar. Add mushrooms. Cook until mushrooms and onions are soft, stirring occassionally. Add mustard, honey, garlic, and bacon bits. Stir until combined. Pour over chicken. Cover dish with foil. Put in 350 oven for 30-40 minutes. Uncover chicken the last 5-10 minutes. Serve on plate of fresh spinach, spooning sauce over chicken and spinach. Sprinkle with parsley.
