  •   Baby Lettuces( Red and Green romaine)
  •   Lolla Rossa
  •   Oak Leaf ( Red and Green )
  •   Dill,Parsley,Cilantro,chives
  •   1 tbls finely chopped shallot
  •   1tbls sherry vinegar
  •   3 tbls extra-virgin olive oil
  •   Sea salt and black pepper
  •   1/4 cup fresh basil leaves, julienned
  •   2 tbls fresh tarragon leaves
  •   4 ounces of French Bucheron or plain goat cheese, crumbeld

Instructions

  1. In a large bowl, wisk the shallot,vinagar and oil. Season to tast with saly and pepper. Add mix greens and herbs and toss well. sprinke with goat cheese and serve.

I found this wonderful recipe in an old copy of Mother Earth News. This flatbread or focaccia especially complements Italian dishes and soups. The texture is somewhat spongy.
