Another of my mom's simple-but-amazing recipes, this soup is fabulous. Sounds weird, but I promise it's fantastic. It keeps very well in the fridge, too.

Ingredients [?] Change Serving Size Add all ingredients to Shopping List

  •   2 T. butter or margarine
  •   1 1/2 cup chopped onion
  •   1 T. flour
  •   1 T. cumin
  •   1 T. chili powder
  •   1 (13-oz) can chicken broth
  •   1 (16-oz) bag frozen corn, thawed
  •   2 cups salsa
  •   8 oz. (or less) cream cheese, softened and cut
  •   1 cup milk

Instructions

  1. Melt margarine or butter in sauce pan and saut? onion until clear. Add flour, chili powder, and cumin; mix well. Add broth, corn, and salsa. Slowly add cream cheese; stir until melted. Add milk and stir until completely mixed. Do not let boil.
