  • add   8 king scallops
  • add   8 long rosemary stalks leafs removed
  • add   juice of 1 lemon
  • add   5 tbsp extra virgin olive oil
  • add   1 tbsp maldon sea salt
  • add   50g (2oz) plain flour
  • add   1 medium onion thinly sliced
  • add   salt and freshly ground black pepper
  • add   vegetable oil for deep frying


  1. 1:- thread each scallop onto a rosemary stalk.
  2. mix together the lemon juice and 3 tbsp of the olive oil in a bowl.
  3. season with some of the moldon sea salt.
  4. place the scallops in a bowl and leave to marinate for 10 minutes.
  5. 2:- meanwhile place the flour in another bowl and season with salt and freshly ground black pepper.
  6. add the onion rings and toss to coat all over.
  7. heat enough vegetable oil in a deep pan for deep frying until a piece of onion dropped in sizzles immediately.
  8. deep fry the in the oil in two batched for 2-3minutes until golden and crispy.
  9. drain on kitchen paper.
  10. 3:- pre heat the grill to medium hot. place the scallops on a foiled lined grill pan. grill for 4 minutes on each side until golden brown and tender.
  11. 4:- arrange the scallops on a large serving platter with the onions. drizzle the remaining olive oil and sprinkle with the rest of the sea salt.
