  • add   1 tablespoon chopped scallions
  • add   salsa
  • add   fresh cilantro
  • add   2 large eggs
  • add   2 whole wheat flour tortillas
  • add   2 large egg whites
  • add   salt and pepper
  • add   1/2 teaspoon canola oil


  1. Cut 2 toasted whole wheat tortillas into 1/4-inch strips.
  2. Whisk 2 large eggs and 2 large egg whites.
  3. Add tortillas, salt and pepper.
  4. Sauté 1 tablespoon chopped scallions in 1/2 teaspoon canola oil.
  5. Add egg mixture; scramble until eggs are set.
  6. Serve with chopped fresh cilantro and salsa.
