I was looking for something quick and good for dinner and had some leftover spaghetti noodles and some cheese cubes I needed to use before the exp. date. I tossed this together in about 5 mins and baked. I served it with a tossed salad and garlic bread it was fast, great and became a family favorite.

  •   1 med onion chopped small
  •   8 oz package cheddar cheese cubes
  •   1 lb ex lean ground beef or ground turkey
  •   1 large jar of Ragu or your fave red pasta sauce
  •   8 ounces cooked spaghetti noodles or other pasta

Instructions

  1. fry the meat and onions until just cooked through. drain and set aside. use non stick spray to coat a large casserole dish. I prefer to use a glass one(20 in. by10 in. 3 in. deep) mix the noodles,sauce and fried meat and onions together in the casserole dish. You should add about 1/2 c water to this because of the noodles. Gently toss and mix the cheesecubes into the mixture. Cover with aluminum foil and cook at 400* for 25 mins. Uncover and continue to cook at 350* for 10-15 mins. Remove from oven and let sit for 10 minutes. You may sprinkle the top with some grated cheese when you remove it from the oven if desired. Serve and enjoy!

You may use 2 large cans of stewed tomatoes (you may not need to add the water with the stewed tomatoes use your judgement) instead of spaghetti sauce and add 2-3 T chili powder for a mexican spaghetti hotdish also. You can substitute any kind of cheese you would like in this recipe. Queso blanco cheese goes great in the mexican hotdish. And of course you do not have to buy those greatly overpriced cheese cubes, you may chop up your own!

To be honest I made this up after a late night out. It isn't as wierd as it sounds though. There were a couple of inspirations. First, My old rommate Dan use to add tuna to his spaghetti for protien. Second, I saw another tuna spaghetti recipe at an amazing family owned resturante in DC called Pasta Mia. Anywho I love creating simple dishes that are insipred by high class meals.
