This is a great recipe I received from my mother-in-law (ex).A great do ahead dish when company is coming.

  •   1 lb lean groud beef
  •   6 oz spaghetti
  •   2 T butter
  •   2 eggs, beaten
  •   1/2 C shredded mozzarella
  •   1 t sugar
  •   1 large garlic clove - minced
  •   6 oz tomato paste
  •   1 can diced tomatoes
  •   1/3 C Parmesan cheese
  •   1 C Ricotta
  •   1/4 C chopped green peppers
  •   1 t dried oregano
  •   1/2 C onion, chopped fine

Instructions

  1. Preheat oven to 350 degrees.
  2. Cook and drain spaghetti according to package instructions. Stir butter into hot drained spaghetti until melted. Add Parmesan cheese and eggs and mix well. Pour into a buttered deep dish pie pan. Smooth to form crust on bottom and sides of pie pan. Spread Ricotta cheese over spaghetti and set aside.
  3. Brown ground beef, onion, garlic, green peppers; stir in tomatoes, tomato paste, sugar, and oregano.
  4. heat until bubbly. Pour into crust.
  5. Bake uncovered for 20 minutes. Sprinkle Mozzarella over the top and return to oven for and bake until cheese melts.
  6. Remove from oven and let stand 10 minutes before cutting.

I was looking for something quick and good for dinner and had some leftover spaghetti noodles and some cheese cubes I needed to use before the exp. date. I tossed this together in about 5 mins and baked. I served it with a tossed salad and garlic bread it was fast, great and became a family favorite.
