Change Serving Size
  • add   1/4" slice of Spam, cut in half
  • add   1/4 tsp bulldog sauce (tonkatsu) rubbed on Spam
  • add   2 Sunny side up quail eggs
  • add   1/2 tsp Habanero masago
  • add   Japanese mustard (for dipping)
  • add   4 Tbsp of Seasoned Sushi Rice
  • add   2 - 1/4" x 4" Nori Strips
  • add   Micro green (for garnish)


  1. Rub bulldog sauce (or A1 Sauce) on Spam, lightly grill.
  2. Form sushi rice into mini oval shaped loaves
  3. Place spam on top of rice
  4. Wrap with Nori strip (damp end with water to stick)
  5. Place sunny side quail egg on top of spam
  6. Place habanero masago on top of egg
  7. Garnish with micro green

Refer to a Japanese cookbook for making the sushi rice, which is critical to the success of this dish. Any tobiko or masago will do, Whole Foods, Dean & Deluca, H-Mart all carry tobiko, masago, nori, sushi rice. Whole Foods and Dean & Deluca carry quail eggs. Spam, which is considered a delicacy in Hawaii, can be found at your neighborhood 7-11. Tonkatsu can be found at any Asian market.
