there is always a time when you are in thought... i had these items & i put this Delicious crowd pleaser together..

- add 5 chicken thigh
- add 2 cup any kind dry rice
- add 1 cup dry black beans
- add 1 large onion diced
- add 1/4 cup dice celery
- add 2 clove garlic diced
- add 1 jar 24oz med salsa
- add paprika to your taste
- add turmeric to your taste
- add extra virgin olive oil
- add saffron (crush 1/2 teaspoon with sugar)
- cook beans put aside cook rice put aside.
- in a med pan saute onion garlic & celery in extra virgin olive oil. add the chicken . on med heat cook for 1 hr. make sure there is enough chicken broth in the pot add the saffron. after 10 min pull each chicken thigh to three pieces & set aside.
- in a large pot layer the rice the beans & salsa & chicken
- with all the broth/ cover & steam for at least 45 min on slow heat....enjoy
