Vegetable patties are popular on Mexican tables. This is one them.

- add 1 teaspoon salt
- add cooked ground pork (hash) (optional) or shredded pork (optional)
- add 1/2 cup all-purpose flour
- add 1 dash black pepper
- add 2 eggs
- add 1/2 onion
- add 2 large sweet potatoes
- add 1 teaspoon grated orange rind
- Combine all ingredients, form patties, and fry.
- May also incorporate some cooked ground or shredded meat.
- For Vegetarian option, omit meat.
