I hear people say they dislike curry...Maybe if it was prepared with love and flavor they might try it again? We enjoy it not only for dinner but it reheats well for leftovers.

2 large chicken breasts (or 4 boneless thighs) cooked & cubed

1 sweet onion (Walla-Walla or Vidalia) chopped

2 crisp apples, peeled and chopped

2 stalks celery, sliced

2 Tbs. olive oil
-
1 Tbs. butter
-
2 Tbs. flour
-
12 to 16 oz. chicken broth, milk or coconut milk
-
2 Tbs. curry powder
-
1 clove garlic, minced or 1/4 tsp. garlic powder
-
2 Tbs. sugar
-
salt and pepper to taste
-
1/4 tsp. Garam Marsala (Indian spice-Optional - not sure of spelling)

Condiments:
-
Salted peanuts or slivered almonds
-
shredded sweetened coconut
-
sliced green onions
-
Major Grey Chutney
-
golden or regular raisins (golden is our fave)
Instructions
- In large pot, melt butter with oil on med. heat. Add the onion, celery and apples and cook about 5 minutes until onion is softened.
- Add flour and stir, then slowly add liquid and stir until smooth. Add in curry powder, garlic, sugar, salt and pepper, and your cooked chicken.
- Turn down heat to low, cover and simmer about 5 minutes until everything is hot.
- Serve on steamed white rice and top with your favorite condiments.

This is a good "company" dish. But we like it just for us too! RE: cooking chicken- I roast my chicken first, others like to poach them. Use whatever method you like (Even canned chicken works if you are in a hurry). Also, don't leave off the condiments, they are key to flavor.
