  • add   2 Tbsps. brown sugar
  • add   2 Tbsps. Thai fish sauce, or other fish sauce
  • add   1/4 cup peanut butter
  • add   1/2 lb. tofu, cut into small pieces
  • add   1/2 lb. cooked chicken breast, cut into small pieces
  • add   3 cups coconut milk
  • add   3 cups chicken stock
  • add   1 red onion\cooked, chopped
  • add   1/2 green bell peppers\cooked, chopped
  • add   1/2 red bell peppers\cooked, chopped
  • add   3 Tbsps. freshly grated ginger root
  • add   3 fresh garlic cloves, minced
  • add   3 habanero peppers, seeded and chopped
  • add   3 jalapeño peppers, seeded and chopped
  • add   3 Tbsps. coconut oil


  1. Place first 8 ingredients in a stock pot. Simmer for 5 minutes. Add chicken stock and coconut milk. Simmer for about 10 minutes. Add the chicken, tofu, peanut butter, fish sauce, and brown sugar. Simmer for 10 more minutes. Let cool before serving.
