From The Palm Restaurant Cookbook. Can be served with Monday Night Salad (Recipe #185915).

- add 1 1/2 tablespoons red wine vinegar
- add 4 ounces danish blue cheese or french blue cheese
- add 1/2 cup mayonnaise
- add 1/2 cup olive oil
- Crumble the blue cheese into a bowl and, using a fork, whisk in the olive oil.
- Let stand for about 40 minutes.
- Whisk in the mayonnaise and vinegar.Whisk again just before serving.
