from may basic cakes recipe usually there is one that could shine through with a little bit of touch .i think i can say it is really awesome!

3 cups flour
-
2 tea spoons backing powder
-
1/2 tea spoon backing soda
-
pinch of salt
-
1 1/2 cups sugar or( brown sugar)
-
1 1/2 cup unsalted butter or (Extra virgin Olive Oil)
-
1 tea spoon pure vanilla extract
-
3 eggs & 1 extra yolk
-
1 table spoon grated lemon zest or (orange zest)
-
1 cup heavy cream or (non fat yogurt)
-
3/4 cup dark rum
-
confectioner's ( powder sugar) for dusting cake
-
additional Rum for topping the cake
Instructions
- preheat oven to 350 degrees
- mix all dry ingredients together(flour, backing powder, baking soda,& salt.
- mix all the wet ingredients . beat eggs ,butter or( Extra virgin olive oil),vanilla,cream or (non fat yogurt),lemon or orange zest,& rum. mix well and fluffy.
- start adding the dry ingredients slowly .
- once all the all ingredient blended well using the 10 cup tub pan .well greased. pour the batter in pan & bake almost for i hr.
- cool the pan & slowly remove from the pan .pour the extra rum
- if you like .dust with sugar powder & enjoy with a cup of your favorite tea or coffee.
