I used to hate cooking a lot more than I do now, and this was one of the recipes that convinced me I could do it. It's about the easiest thing you can imagine and you don't even need to use the oven (you can, but it's not so slick).

2-3 boneless Skinless Chicken Breasts

1/3 cup Olive Oil
-
1 tsp Oregano
-
1 tsp Tyme
-
1 tsp Fresh Ground Black Pepper

1 tsp Salt (really to taste, no more than 1 tsp)

Optional:

2-3 thin slices of lemon
-
1 tsp ground Italian seasoning mix
Instructions
- Defrost chicken breasts in fridge overnight, place breasts in 9X9 pan and cover liberally with spices on both sides making sure to lay breasts as flat as possible in the pan. Pour oil over breasts and shake the pan to coat the breasts without washing the spices off.
- Set cold toaster oven to 'Bake' setting and to 350 degrees, set the timer for 35 minutes. Place breasts inside and enjoy the 35 minutes to yourself. Remove the breasts, cut the thickest part to make sure it's cooked, and enjoy. Don't leave the chicken in the toaster oven or it will overcook.

I lived with the great Gabiati and seen and tasted dishes like this one. He I can testify that he would pop it in the toaster over do his thang' and when the timer went off presto, meal is good to go! Made a very juicy chicken...

A couple slices of lemon will help liven up the dish if you're eating it all the time. Also, you can switch up different kinds of dried spices if it gets boring. I like to prepare this dish before I go to the gym or something and leave it in the toaster oven, so all I have to do is turn the toaster on when I get home and 35 mins later I have a healthy, tasty dish.

This was a delish recipe. It was very juicy and I had no idea it came from a toaster oven!!!! Mario made it with pasta on the side that was perfect.
