  • add   1/4 teas black pepper
  • add   1/2 teas salt
  • add   2 TBLS orange zest
  • add   1/4 cup thyme leaves
  • add   1 cup chives, finely chopped
  • add   1 cup parsley leaves
  • add   1/4 cup fresh lime juice
  • add   3 TBLS olive oil
  • add   1 1/2 cups pineapple, diced <P><U>Dressing</U>
  • add   1 cucumber, minced
  • add   1/2 cup red onion, minced
  • add   cubed 1 red pepper, diced
  • add   3 cups pre-cooked chicken
  • add   <U>Salad</U>


  1. In large bowl, toss together chicken, red pepper, red onion, cucumber and pineapple. In bowl of food processor, place all ingredients for dressing. Process until pureed. Pour dressing over salad ingredients and toss well. Serve immediately, or cover and refrigerate until served.
