This soup is so hearty and filling, but very healthy and low cal! We gobbled this up in two days! I chose not to add any pasta-the potatoes giving enough starch for me. If I decided to add 1 1/2 cups small pasta, i think i would cook it half-way, then add it at last 10 minutes and possibly add another 1/4 cup of water. This can also be made vegetarian by omitting the ground chuck. Enjoy!!!

It's finally here! What everyone's been waiting for! Just in time for winter, this soup is sure to warm your soul with it's savory flavor and wonderful aroma. I've asked many an Olive Garden waiter for this recipe, but none gave it to me in detail. One waiter told me the secret ingredient was to add a little red wine to the stock, but I'll leave that up to you to try.

Found this quote on the back of an Italian lentil soup mix years ago... Soup does seven things: It appeases your hunger, slakes your thirst, fills your stomach, cleans your teeth, makes you sleep, helps you digest and puts color in your cheeks. Well.... it might! =) Hope you enjoy this soup. This recipe freezes well, also.
