  • add   200 gm Butter
  • add   150 gm Sugar
  • add   4 nos Eggs
  • add   200 gm High Protein Flour
  • add   400 gm Mixed Fruits
  • add   30 ml Rum (or Brandy, Sherry, Whisky)
  • add   Some Gelatin Gel(Gelatin+Water+Sugar) or Apricot Jam (Optional)
  • add   12 pc Glace Cheery
  • add   10 pc Prune
  • add   12 pc Walnuts
  • add   1 pc Dried pineapple


  1. Soak Mix Fruits and Rum overnight.
  2. Soften butter to room temperature before use.
  3. Sift together the high protein flour.
  4. Preheat oven at 170??C. Lightly grease a 7 inch round cake tin. Arrange ingredients A nicely on the bottom of the tin for the up side down decoration.
  5. Beat butter and sugar until creamy.
  6. Add eggs into the mixture slowly, one at a time until well combined.
  7. Add sifted flour into mixture slowly, and mix them well. DO NOT over beating.
  8. Add in soaked mix fruits, mix well and pour into the prepared tin.
  9. Bake in preheated oven at 170??C, about 80 minutes.
  10. Leave in the tin to cool slightly before turning out and put it up side down on to wire rack and you will amaze by the attractive fruits, nuts, or seeds that you arrange.
  11. Spread Gelatin gel or Apricot Jam on the top (optional).
  12. **Make it a real fruit cake! Try add mix fruits up to 800gm.

Or adding Cashew nuts, Almond nuts, Raisins, Sunflower seeds, Glace Ginger... feel free to change the fruits and nuts or seeds that you love!
