Ingredients [?] Add all ingredients to Shopping List

  •   1/2 tsp. caraway seeds
  •   Vegetable stock, to taste
  •   1 large handful fresh grated horseradish
  •   2 1/3 cups water
  •   4 1/3 cups cream substitute
  •   8 g vegan margarine

Instructions

  1. Cook all the ingredients together, until hot, and then pure with a hand-held mixer. Let the soup cook gently for 10 minutes.

"This makes a very thick vegetarian split pea soup. To make it thinner, reduce the amount of split peas or add more water. Depending on the density of split peas, it may take a while for the vegetables and peas to soften, but you can't really overcook this soup; just stir occasionally, and add water if it gets too dry. Seasonings can be altered to taste. Tastes even better reheated."

I found a similar version of this recipe on my favorite food blog (thanks, Orangette). Serve this delicious soup with a big hunk of San Francisco's famous sourdough bread for an awesome fall meal. I realize how cheesy that sounds but seriously, you'll love it.
