Veggie Quesadillas

Prep:

Looks like "junk food" but are a good way to sneak some veggies into your (or your kids) diet. Also great for game day. I make them for our poker parties or anytime we want a "good for you" snack.

  • add   3 cloves garlic
  • add   1 bell pepper
  • add   pepper
  • add   1 medium summer squash
  • add   2 carrots
  • add   jalapenos
  • add   cooking spray
  • add   1 (8 ounce) package cheese, grated (cheddar, jack or colby, whichever you prefer)
  • add   1 medium zucchini
  • add   salt
  • add   flour tortillas
  • add   1 medium onion
  • add   3 green onions

Instructions

  1. Spray pan with cooking spray and heat.
  2. Add all veggies except jalepenos and green onions and cook until tender, about 3-5 minutes.
  3. Salt and pepper to taste.
  4. Heat grill (or another frying pan) and spray with cooking spray.
  5. Place tortilla in pan and fill one side with about 1/2 cup of veggies.
  6. Sprinkle with cheese, jalepenos and green onions and fold empty half over.
  7. Grill for aproximately 45 seconds to 1 mintute, depending on heat.
  8. Flip and grill other side.
  9. Remove from pan and cut.
  10. Serve with salsa and sour cream if desired.
