  • add   4 Extra large Baking Potatoes
  • add   3 Cups Flour
  • add   1/4 Cup Corn Starch
  • add   2 quarts of Vegetable oil (for frying)
  • add   2 Tbsp. Salt
  • add   Southwestern Seasoning made by combining the following:
  • add   1 Tbsp. Granulated Garlic
  • add   1 Tbsp. Onion powder
  • add   1 Teaspoon Chile powder
  • add   1 Teaspoon Ground Cumin, toasted
  • add   1 Teaspoon ground Coriander, toasted
  • add   1/2 Teaspoon Cayenne Pepper
  • add   1/2 Teaspoon Ground Black Pepper
  • add   The toppings:
  • add   8 oz. freshly grated Pepper Jack cheese
  • add   8 oz. freshly grated Cheddar cheese
  • add   1 large ripe Tomato, diced
  • add   4 oz. sliced ripe olives
  • add   2 whole sliced jalapeno peppers
  • add   2 bunches of scallions, diced
  • add   1 ripe avocado
  • add   ? bunch Cilantro
  • add   1 cup Sour cream
  • add   Tabasco sauce
  • add   1 lime

Instructions

  1. Prepare the southwestern spice blend in a bowl and set aside for later.
  2. Prepare the southwestern cream by adding 2 teaspoons of southwest seasoning blend and 1/2 teaspoon of salt to 1 cup of sour cream, add the juice of 1/2 of a fresh lime and 2 teaspoons of chopped cilantro set aside.
  3. Assemble all of your prepared toppings.
  4. Preheat your fryer to 325 degrees.
  5. Peel the potatoes and place in cold water to keep them from browning.
  6. Slice them into waffle shape on the mandolin by rotating the potato 45 degrees between each slice.
  7. Par cook the fries in the hot oil, drain them well and set aside to cool.
  8. Raise the fryer oil to 350 degrees.
  9. Prepare some seasoned flour by adding 3 Tablespoons of spice blend to 3 cups of flour and 1/4 cup of cornstarch.
  10. Toss the pre cooked chips in the seasoned flour and shake off the excess.
  11. Fry them in 350 degree oil until very crisp, remove the chips, season with salt and drain them on an absorbent towel.
  12. Place the fries on two oval platters, cover them both with a liberal dose of the two grated cheeses and melt under the broiler.
  13. After the cheese is fully melted, sprinkle the two piles with plenty of tomatoes, olives, scallions and Jalapenos.
  14. Now slide one pile on to the top of the other and garnish with an avocado and southwestern cream
