Woshiba Chicken
Instructions
- Preheat oven to 400°F. Place chicken in a earthen pan. Peel the garlic and ad whole into pan. Add worestershire sauce and balsamic vinegar. Place in oven for 40 minutes.
Peel and cut the potatoes and place in pot. Add water to cover and place on stove on medium-low for a simmer. Cook until you can a run a fork through with no restitance.
Once the forty minutes are up, place chicken on counter top and let it rest for a couple of minutes (about 5 minutes). In the mean time, when potatoes are done, drain and place back into the pot. Add sea salt to pot and start mashing. After about 4 strokes of mashing add butter. Mash until the butter melts into the potatoes and turns to a light golden color. Add the sour cream into the potaotes and mash until creamy. Once the chicken has rested for the couple of minutes, plate it. Add the mashed potatoes to the place and use the sauce from the pan that you cooked the chicken in. Serve warm with a pat of butter on top the potatoes.
