Yeast Free Wholemeal Bread

This is so far the BEST yeast free bread that I have baked for my daughter who has candida. It tastes really nice, holds together well and is so quick and easy to make. I adapted this recipe from an Irish Soda Bread recipe called Wheaten Bread which I found on an untitled web site.

  • add   1/2 teaspoon salt
  • add   1 teaspoon baking powder
  • add   1/4 cup rolled oats
  • add   2 cups rice milk (or preferred milk incl. buttermilk)
  • add   3 cups whole-wheat flour
  • add   1 tablespoon sugar (I use sweetener as my daughter has candida)
  • add   1 1/2 tablespoons butter
  • add   1 teaspoon bicarbonate of soda (baking soda)

Instructions

  1. Pre-heat oven to 200 deg.
  2. celcius (392 deg. farenheit).
  3. Combine all dry ingredients then mix butter through well with a fork.
  4. Add milk (and sweentener if it is a liquid) mix until well combined.
  5. Put mixture into a greased loaf tin and bake for 50 minutes.
  6. Remove bread from tin and cool on a rack.

I created an account here just to review this recipe. I've tried many yeast free bread recipes & most taste like soda bread & tend to use 3+ tsp baking soda to make up for the lack of yeast. This recipe is perfect! Very tasty! I added some sunflower seeds in the dough & sprinkled some oats on top as shown in the picture. I also brushed the top of the unbaked dough with vegan butter before topping with oats. I used water instead of rice milk & baked the loaf in a 9" springform sprayed with non stick spray. I also added 2ish tbsp vital wheat gluten to help the bread rise & to make it softer on the inside. My loaf came out delicious! My husband went back for seconds. Very good recipe! Thank you!
