"This is a creative, unusual casserole that's one of my grandmother's favorites. It combines zucchini and bell pepper with Cheddar cheese, spices and crispy corn flakes. Bread crumbs can be used in place of cornflakes."

This came out of the Weight Watchers Cookbook but it is far from tasting like WW. It is 2 points for a one-cup serving and DELICIOUS. My daughter discovered this recipe and makes it all the time, too. This...

This makes two loaves. A very moist nut bread with an orange glaze on top. Delicious! They make nice gifts if you tuck one in a basket with a pretty napkin and bow. This is one of the recipes that I did in "Christmas Goodie Class" a couple of years ago. Everyone got to taste it and loved it. Enjoy!
