- 1. Chicken Breast Filling:
- 3/4 cup crumbled feta cheese.
- 2 Tablespoons fresh chopped parsley.
- 3 Tablespoons fresh chopped basil leaves.
- 2 cloves fresh garlic finely minced.
- 3 Italian plum tomatoes. Blanched, Skinned,
- seeded, and fine diced. Combine all the
- ingredients in a bowl . Chill and set aside.
- 2. Citrus Salad Dressing:
- 1 1/2 oz. cornstarch.
- 6 1/2 oz. granulated sugar.
- 5 whole eggs
- 1/4 cup lime juice.
- 1/4 cup lemon juice.
- 1/4 cup orange juice.
- 3/4 cup mandarian orange juice from an
- \ 11 oz. can of oranges.
- 1/2 cup plain yogurt
- 1 cup sour cream.
- In mixing bowl combine the cornstarch and sugar. mix well.
- Add the eggs and beat with hand mixer until blended and creamy in texture.
- Combine all the fruit juices. Heat and bring to a slow boil.
- Slowly add the heated juices to the egg sugar mixture.
- Return the mixture to a slow boil stirring until thickened.
- Pour into a chilled bowl to cool down completely.
- Combine yogurt and sour cream. Add to the chilled mixture using a wire wisk until smooth. Refrigerate.
- 3. Spinach salad:
- 8 oz. baby spinach leaves without stems
- about 6 cups total.
- 1/2 to 3/4 cup juliene sliced red onion.
- 8 oz. fresh sliced mushrooms.
- 1/2 cup feta cheese.
- 1/2 cup sliced almonds.
- mandarian oranges drained from the
- 11 oz. can used for the citrus dressing.
- Place spinach leaves on salad plates.
- Follow by arranging the rest of the
- ingredients on top of the spinach to
- make it attractive. Wrap each salad and
- chill.
- 4. Chicken Preparation:
- (4) 6 oz. boneless skinless chicken
- breasts.
- Using a sharp knife, cut into the wide
- end of the chicken breast. Cut a 3 inch
- slit into each breast deep to form a
- pocket. Using a teaspoon fill the
- pocket with the filling made earlier.
- Season each chicken breast with a
- \ commerical blackened season mixture
- Pan fry in oil until golden brown on
- both sides.
- Remove from skillet and place in a
- baking pan.
- Bake in a 350 degree oven for 35-40
- minutes or until done.
- Remove from pan and cut each
- chicken breast on a bias to fan out.
- Place one chicken breast on top of
- each spinach salad and drizzle with
- citrus dressing.

- For 2 large deep dish pies:
- 3 lg sweet potatoes
- 2 eggs
- 1 cup natural sugar
- 1 stick salted butter
- 1 can evaporated milk / orange juice
- 1 tbl spoon vanilla extract
- 1 tea spoon lemon extract
- 1 tbl spoon nutmeg
- have your eggs, butter and milk and pie shells at room temp.
- pre heat oven to 400 degrees ( I suggest that you start this proccess early in the morning)
- wrap your potatoes in alluminum foil and bake for 1/2 hrs til soft ( let potatoes cool down enough to handle before unwrapping yet still warm) *turn oven down to 325 for pies*
- when potatoes are ready you'll need a large mixing bowl a mixer or a potato masher
- unwrap potatoes from the foil( but don't ball up the foil ) peel and discard the skin and place the potatoes in the bowl along with the oil from the potatoes (boiling takes away the nutrients)
- Mix or mash potatoes whichever your using.
- Add butter then mix in then eggs, cup of sugar, then1 can milk(or to the thickness that you desire) and mix real good
- Add tbl spoon of vanilla and tea spoon of lemon
- *secret weapon.... add 1-3 caps of orange juice(taste)
- Add nutmeg (or to your liking)
- "BEFORE YOU POUR THE CUSTARD IN THE SHELLS?
- Melt down some butter. Using a fork polk wholes around the bottom and sides of each pie crust and spread the butter throughout each pie crust and then place in the oven.
- The moment the crust starts to rise take them out and then add your custard( this is so that the crust isn;t gooey)
- Bake until the pie is firm to the touch and then remove from oven
- "Now my secret weapon which gives it the Gourmet touch!
- Maple syrup....maple syrup? "yes maple syrup.
- Pour some syrup in a small cup..... get you a piece of napkin or paper towel whichever,
- Dip it in your syrup......and spread it around the edges of the pie crust all the way around
- Reapeat this process 3 times....know why ?
- Because the crust is the last thing that goes into your mouth and the syrup compliments the pie
- instead of that dry burnt taste you get when you get to the crust........ you'll get a sweet taste throughout your eating. {-:
