- East West Chicken Loaf is very special to me, because a day before the harricane Jeanne, I made this dish knowing that we might loose the electricity during the harricane. Being an asian,(Thai) I used some asian and combined with American ingredients
- not to mention that he is a very picky eater! Best of all it freezes well and perfect for sandwiches, we did ate when it was cold and for three days while the lights were out. This dish would be great for the holiday meals, instead of just Ham
- or Turkey. It can even be used as second dish. For us it can be any day!
- Serve 8 or more...
- #1. 4 chicken breast ground ( or you
- can buy ground chicken breast).
- 3-4 skinless thigh have some fat to it
- (ground) and put all in a big bowl.
- #2. 1 1/2 cellery sticks, cut into one
- inch pieces with some young leaves,
- 1 1/2 carrots cut into one inch pieces.
- 6 oz button mushrooms, quickly
- rinse and cut half.
- 1 small can of chinese chestnuts cut
- half.
- 1 small yellow onion cut into one inch
- 2 cloves of garlic.
- 4 to 5 stems of cilantro leaves, cut
- into inch.
- divide all these ingredients in half
- and put each halves in food
- processor. Process, puls and
- process, but don't process too fine
- otherwise it will become watery. Put
- into a large bowl and do same
- with the other half also.
- #3. 2 cups japanese bread crumbs
- (called Panko).
- 2. tea sp, freshly ground blackpepper
- If you want little kick to it then add
- 2 tea sp of dry red pepper flakes.
- 2 tea sp of garlic powder
- 1 1/2 tea sp of baking soda
- #4. 1 large egg plus 1 egg-white, beat
- well.
- #5. 1/3 cup of Oyster sauce
- 1 tbl sp of fish sauce
- 1 tbl sp (or more) La Choy soy
- sauce.
- 5 boiled eggs (10-11 minutes to boil)
- peel and score the eggs.
- 1/2 a stick of unsalted butter to coat
- the baking pan.
- 1 small box of cherry tomatoes
- (6 oz box) and 1 box of yellow pear-
- pear tomatoes.
- Use any types of bread loaf
- pan, but I prefer to use angle cake
- pan or a long bread loaf pan, which
- is about 4" x 16".
- For garlic Chicken gravy:
- 3-4 tbl sp of unsalted butter
- 3 tbl sp All Purpose Flour
- 1 cup of milk
- 1 1/2 cup of chicken broth home made or store bought ( I prefer home made )
- 1 clove of smashed and chopped garlic
- 1/4 tea sp of chicken flavour bouillon
- For Home Made Chicken Broth:
- 1 chicken back or any parts of chicken bones.
- 4 cups of water
- 1 tbl sp of fish sauce
- 2 cloves of smashed garlic with skin
- 1 smashed shallot with no skin
- Boil all the ingredients in a medium pan until it is reduced two cups. Use this broth to make the Garlic Chicken Gravy.
