Someone gave me this recipe a few years back and it's become a household favorite. You can use mild, medium or hot salsa depending on your taste. I usually serve it with Spanish rice and Mexican-style canned corn. Very easy and quick!

Tender, fall-off-the-bone chicken! Omit the overnight refrigeration if you are in a hurry. For variety, eliminate the onion and substitute a quartered lemon or two, stuffed into the chicken cavity. I made this cake for an Autumn Harvest Party we had. It was a huge hit. It's very moist and very delicious! But I don't think you'd have to wait till autumn to make it, it would be good anytime! And it is really easy to prepare!
I'm posting this recipe here so that I don't lose it! I haven't tried it but it seems worth trying. Can't get much easier. With a good stout or dark beer this could be extremely yummy. Originally from the kitchen of Rosemary Champion.
