This salsa is always on hand--I keep some in the refrigerator at all times, as my son has to have it with Tostitos every day! It's easy to make, and it's always a crowd-pleaser. Use lots of fresh cilantro, and add more jalepenos to increase the heat!
This is a very good, easy, everyday recipe. On a busy day, I usually dump the ingredients (except the cheese, cilantro and sour cream--save those for serving) into the crockpot and serve it wrapped in tortillas when ready (add the cheese, cilantro and sour cream before wrapping the tortilla.) Ole!!
It's a pasta salad with spinach....or, it's a spinach salad with pasta. Either way, it's full of color and flavor. I serve this at summer parties (and at Ruby's bridal shower) and am often asked for the recipe. Delicious served the day it's made, and yummy the next day as the flavors meld (you may need to drizzle a little olive oil on it then, as the pasta absorbs much of the dressing.)
